Eggplant Hummus

I love creamy Mediterranean dips and make them over and over, like this black bean hummus, edamame hummus, vegan labneh and baba ganoush. Here’s another hummus recipe to add to that delicious list: my Roasted Eggplant Hummus with Za’atar. I have made this recipe so many times now, I can make it blindfolded, although probably not a great idea, that. It does take a little more work than making your plain old hummus in that you have to roast the eggplants, but all I do is cut a large eggplant in half, put it cut side down on a foil-lined baking sheet, and pop it in my toaster oven for 30 minutes at 450 degrees....

Golden Beet Carrot Slaw Holy Cow Vegan Recipes

This Indian style Golden Beet Carrot Slaw is a recipe I put together in a hurry when we want a nutritious side to complete a simple Indian meal of dal and rice, or a summertime meal of veggie burgers. Most of the prep in this recipe happens in the food processor, although if you don’t have one, you can certainly grate the beets and carrots by hand. Factor in another 5-10 minutes of cooking time, if that’s the case....

Homemade Avocado Blue Cheese Salad Dressing Light Creamy

on Mar 12, 2018, Updated Aug 25, 2020 It’s time to bring out the salad bowls! It’s starting to get pretty hot around here and salads are the only things I can even attempt to eat in the afternoon. With a big bowl of yogurt! Is that a weird combination? I’m just happy it works. It keeps me going at the hottest time of the day and doesn’t make me too hot....

Indian Restaurant Vindaloo Curry

Vindaloo is a Goan dish. Goa, if you haven’t heard of it, is a city on the west coast of India. Interesting thing about Goa. That’s where the Portuguese landed when the came. Who cares you ask? I do. You should too if you like Indian food. The Portuguese brought chili to India. They brought potatoes as well but chili was the big one. Before the Portuguese the Indian’s had pepper....

Millet Bisi Bele Bath My Food Story

on Dec 21, 2023 I’ve been living in Bangalore for 10 years and one of the things that this city has given me is my love for Bise Bele Bath. This is a traditional dish prepared here in Karnataka, which, when translated means “hot lentil rice dish”. You might also like these recipes for navratan pulao and vegetable korma. A Navratan Korma is what Indians call a “shahi” dish: a food so sumptuous that it is fit for royalty. Puran Poli Holy Cow

The Ghost of the Banyan Tree The story was that the Ghost lived in the 100-year-old banyan tree that stood just behind Building No. 13 in J. P. Nagar. At night he or she (for no one had actually seen the Ghost) would come out and hang around the domed water tank that sat like a giant cement idli smack-dab between the parallel roads leading into the housing society. Now and then the Ghost would scare some unsuspecting passer-by by placing an unseen hand on his or her shoulder and then exploding into a hollow, cackling laugh that echoed around the neighborhood, especially on windy monsoon nights....
