Everything’s super crunchy, and that delicious Asian ginger dressing just takes everything several notches higher! The best part about this recipe is that it’s not your regular lettuce salad. This Chinese chicken salad had the perfect crunch from the veggies, lots of flavour from the delicious Asian dressing, and the fried noodles just seal the deal in the texture department. The only possible downside of this recipe is that it requires a fair bit of chopping, but you can either prep that in advance or use a food processor.

You can make them at home with this recipe for fried noodles and store them in an airtight container for weeks. Or you can buy from the supermarket. But it’s definitely more fun making them at home and I make a big batch which we then use to top on soups on salads.

Asian Ginger Dressing

One of the best parts of this Chinese chicken salad is the dressing. It’s a simple mix of light soy sauce, rice vinegar, toasted sesame oil, canola oil, honey and ginger. It’s simple enough, and you might just have most of these ingredients in your pantry. Simply toss everything together in a jar or whisk them in a bowl. The dressing is good in the fridge for a few days. So you can literally make everything ahead and store it in the fridge for whenever you are ready to toss it.

Top Tips To Make The Best Chinese Chicken Salad

I would highly recommend getting your hands on some Chinese cabbage. Not only does it lend the perfect crunch, but the beautiful purple colours looks just brightens up this dish. But if you can’t find some, you can always sub it with some iceberg lettuce. If you are in a hurry and don’t have a food processor to help with the chopping, go ahead and buy pre-cut veggies from the store. If you are prepping this advance, chop and prep the veggies and chicken, but add fried noodles and the dressing right before serving. This will prevent this salad from getting soggy and maintain that lovely crunch.

I am of the opinion that salads don’t have to be boring. You can eat healthy salads, and still make sure that they’re yummy. And once you have this crunchy chicken salad that’s loaded with lots of delicious texture and Asian flavors, I bet you’ll change your mind too.
