Yes, noodles from vegetables. I often use to it make zucchini noodles, cucumber spirals, apple noodles, curly fries, and it’s a total hit every single time. I use them in everything! Salads, soups, rolls, curries; sometimes replacing noodles entirely like in this salad. In case you’re curious, this is the spiralizer I use.

To make this salad vegetarian, simply the prawns with a vegetarian protein such as paneer or tofu. You can add more veggies like broccoli, red and yellow bell peppers, etc. if you like. You can even replace the prawns with boiled and shredded chicken if that’s more easily available to you. The flavors might change a little, but it will still taste amazing. You can make this salad ahead, but remember to mix in the dressing just before you’re ready to serve. This will prevent the salad from becoming soggy. Simply double the recipe if you’re making this for a large crowd. The cook time of your prawns will depend on their size. The time mentioned below is for tiger prawns, but if you’re using a smaller variety, then reduce the cook time accordingly.
