I immediately got to work, and that was how this Frozen Peach Mango Smoothie was born! This is the kind of smoothie that works just by itself, but can even be paired with your regular breakfast to make it more wholesome and interesting. I have replaced regular milk with coconut milk for a vegan version (also mango and coconut milk are a match made in heaven). Plus, using frozen fruits means this smoothie is as thick as it gets!
Richa’s Top Tips
For a super thick smoothie, my trick is to freeze the fruits overnight. Then you don’t need the extra ice which can dilute it and make it watery. I like to use a ratio of 2/3 frozen fruit to 1/3 liquids for the perfect smoothie consistency. I have used coconut milk for this recipe, but you can also use Greek yogurt, skim milk or any other plant-based milk of your choice. Adding a tablespoon of uncooked instant cooking oats along with the fruits and liquid will deliver the perfect consistency. I prefer using fruits which are naturally sweet like mangoes, over ripe bananas, peaches, even melons, which usually eliminate the need to add a sweetener. However, once in a while you need to add an extra dash of honey. Honey has a nutty flavor which sugar doesn’t, which is why it works so well in smoothies.
