I am not complaining though because pancakes have to be one of the easiest things to make out there. And these mini banana pancake bites are no exception. Slices of banana are dipped in a pancake batter and then cooked on a hot skillet. The result is extremely soft and fluffy bite-sized pancakes with a surprise centre. Pancakes that look and are also delicious? I am in!! The kids are going to love this one!

You can use any pancake batter to make these mini banana pancake bites. I switch between this, my chocolate ragi pancake and spinach banana pancake batter to keep things fun and interesting. You could even use a ready pancake mix if you are pinched for time. When you grease the tawa with butter, make sure to wipe off the excess. This will allow the pancakes to brown more evenly. Slice the bananas to about 1/3rd of an inch to allow the batter to cook fully. If the slices are too thick then it’s likely the sides of the pancake bites could remain undercooked. Avoid using overripe browned bananas as they won’t hold their shape, which could result in mushy, broken pancakes.
