Even though I have only added potatoes, you can add whatever veggies you like and have available. Some veggies that will taste great in this curry are carrots, bell peppers, peas, mushrooms, and cauliflower. I haven’t used any store-bought curry powder since most Indian kitchens already have powdered spices ready. However, you can use a curry powder if you like. I would highly recommend not skipping garam masala for this recipe. I have used my homemade garam masala, but you can use a store-bought one as well. If you want a creamier curry, then feel free to add some cream or coconut cream to it.
