If you’re looking for pumpkin recipes to make the most of the holidays – I’ve got you covered. Want to cook more with pumpkin this season? This has been our go-to breakfast this pumpkin season – and an especially big hit with my 11-month-old. It’s essentially a traditional waffle batter that’s been spiced with some ground cinnamon, garam masala (almost like pumpkin spice), ground ginger, and of course, heaps of pumpkin puree! You can prep the batter ahead to use for busy mornings, and even make Pumpkin Pancakes using it. Whatever it is, this recipe always finds its way into our meal plans come December and has got to be on yours!
Ingredients You’ll Need
Egg – You could sub with a flax egg but I haven’t tried that out Sugar – I use granulated sugar herePumpkin Puree – Both fresh or canned work. To make fresh pumpkin puree, the steps are outlined in the recipe card belowMilk –Whole milk, can be subbed with plant milkVanilla Extract – Don’t skip this!All-Purpose Flour (Maida) – You can use gluten-free flour instead to make these gluten-freeBaking Powder – I use aluminium-free baking powder from Urban PlatterButter – to add moisture and for brushing Spices – Garam Masala (or Pumpkin Spice Powder), Cinnamon, Ground Dry Ginger
How to make Pumpkin Spice Waffles
- Pour 1/4 cup batter in the center of the waffle plate
- Cook for approx 4 minutes till the waffles are crisp and golden brown
