on Oct 30, 2024 This rasmalai Sandwich is a quicker, healthier version of the OG Bengali dessert, rasmalai. We use all the same ingredients and flavors – the paneer, saffron, elaichi – but this one’s crunchy, crispy, and a whole lot easier! Plus, you don’t need anything fancy to make this easy-peasy Rasmalai toast; you’ll most likely have all the ingredients already in your kitchen. So it’s the perfect thing to make for unexpected guests. And the bonus? This dessert is insanely healthy. It has a creamy texture, but uses no cream. The bread can be deep fried, but I prefer to toast it so it’s crispy but still light. No one’s going to want to stop eating this one!
Rasmalai Sandwich Ingredients Overview
To make the frosting, we blend together paneer, icing sugar, softened butter, and kesar strands soaked in milk. Crunchy, toasted bread forms the base of this dessert. You can even deep fry it in ghee if you like, but I prefer the lighter texture of toasted bread. This toasted bread is then soaked in a sugar syrup, which is made by heating sugar, water, saffron strands, and cardamom powder. After assembling toasted bread and frosting, we finish it off with a garnishing of chopped pistachios and serve immediately! This rasmalai sandwich is such an easy way to put together a stunning and delicious dessert for your Diwali party. And it helps that this one’s really light and healthy too!
